You could consider the links-hacked browser for this. It has a compile time option to log all HTTP trafic to a file. However it is not GTK. It does not use any widget library. It is a full featured graphics browser, with SSL and JavaScript. To comile it you need to read http://www.stud.fh-dortmund.de/~jkorte/links/install-links-hacked.html links-hacked can be a little tricky to compile, and there are no precompiled packages avialable, so if you have any problems, ask.
